celery salt (none of this branded-rimmer stuff, use the real deal)
1 oz half-decent vodka (Adam recommends Smirnoff or Absolut)
2 dashes of Tabasco sauce (accept no substitutes!)
3 dashes of pepper
Clamato (buy the biggest bottle you can find so you're ready when people ask you to make one)
GARNISH: celery stalk
RECIPE
Rim the edge of of a highball glass with lime juice
Dip the rim of the glass in celery salt to coat the rim completely
Squeeze the juice of your lime wedge into the bottom of the glass
Add 1 ounce of half-decent vodka (no need to break out the top shelf stuff here, but don't use the crappy stuff or it will spoil the flavour)
Add 3 dashes of Tabasco sauce (feel free to adjust to suit your taste -- 2 for a more mild drink, 6 for a punch-you-in-the-mouth level of spice)
Add 3 dashes of fine ground pepper and 1 dash of celery salt
Top with Clamato juice leaving enough room for your ice
Stir to combine and add 3 ice cubes
Garnish with a tall stalk of celery.
Tip: If making multiple Caesars for a group (because once they taste their friend's drink they will want you to make them one) be sure to make each one individually. Yes, it's more time consuming than simply making a big jug, but you'll never get the ratios exactly right. Don't be lazy, take pride in your work, and do it properly.
Unless, of course, you're trying to get out of making everyone Caesars, in which case the pitcher option will ensure you're never asked to do so again.
